COLORFUL SPRING ROOT SALAD


Spring time means new produce in an abundance of colors. It is also the time to try out something new and this is what my mom and I happened to come up with: A beautiful root salad topped with an assortment of goodies.


What you will need:

*1/2 a Red Beet 
*1/2 a Carrot
*1/2 a Red Cabbage
*1/4 a Yellow Onion
*1/2 an Avocado
*Couple spoonfuls of Mango Salsa (recipe coming soon, but if you can find any at the store if you don't have it home made than that works too!)
*Tablespoon of Sprouted Sunflower Seeds (sprouted for extra nutritional value)
*Few pieces of Dulse

*All ingredients I used are USDA Organic*
*Makes 1 - 2 servings

Directions:

1) Grate the red beet and carrot. Finely shred the red cabbage. Finely chop the yellow onion. 
2) Place veggies above in a plate/bowl and top with some sliced avocado and sprouted sunflower seeds
3) Add some mango salsa (you can add more or else for taste, this acts as your dressing) and some dulse for added salty flavoring.

This is really simple to make. Not only are the colors in this salad so vibrant, but this salad is also very tasty with a lot of nutritional value! You cans serve this during a nice sunny lunch or as a first course in a dinner party you may be hosting.
