Tasting Preview at Zephyr Bar inside the Embassy Suites Seattle

Last week, I was invited to attend the a happy hour event at the new Embassy Suits Zephyr Bar in Pioneer Square, Seatle and had such a great experience! They open to the public in about a week and I can see this new bar as a great location to meet with friends and coworkers after a long work day.
I love the business model behind Zephyr and how they're very much into keeping things fresh and as local as possible, teaming up with local businesses and sourcing local when possible. You can really tell by their menu offering.

We started off the evening with a refreshing cocktail and some small bites including fresh oysters on the halfshell, cured meats from salumi, and fresh bread from essential bakery along with some fruits and cheese.

Next up was a tasting of deviled eggs with the tastiest cured salmon I have ever had, dungeness crab mac and cheese (not pictured), but my favorites were the octopus and pork belly dishes which were both so tender, not chewy, extremely flavorful and well presented. I would go back just for either of those dishes.

We ended the night with a cocktail preview on how the bartender creates this lovely rose cocktail pictured above. There's a lot of thought and care that goes into their preparation and it really shows in the final product. They offered attendees of this event a tour of the hotel (this was the start of my becoming sick so ended up leaving before we could do that, sadly!). However, from the photos I've seen from other bloggers, everything looked amazing!

Overall, it was an amazing night with some great food and company. My friend who came along also really enjoyed the food. She works in the Pioneer Square area where the hotel is located and would definitely go back with her team as well.
