RECIPE: CURRY QUINOA MEDLEY

I've been loving the use of curry powder in many dishes and decided to add it to a quinoa dish. I love how you can add both savory and sweeter bits to curry to emphasize the curry flavor. Today's dish features this curry quinoa dish with a mix of apples, dried cranberries (as opposed to raisins) and raw almonds.
 
 
 

 
Ingredients
  • 2 cups cooked quinoa
  • 1 - 2 tbsp. raw coconut butter
  • 1/2 tbsp. curry powder (more or less to taste)
  • Himalayan pink salt (to taste)
  • 1/2 lemon - juice
  • Half an apple - chopped
  • Handful of Raw soaked almonds - chopped
  • 1/2 cup dried cranberries
  • Handful of cilantro - chopped
Serves 2 to 4

Tips
  1. Mix coconut butter to cooked quinoa.
  2. Add curry powder and Himalayan salt to taste
  3. Add the chopped apple, almonds, dried cranberries and cilantro
  4. Squeeze the juice of half a lemon and mix.

*This dish tastes better if the flavors soak overnight but it can still be eaten right after you prepare it!

  2. Thanks! I'm not a fan of raisins so I always opt for dried cranberries and I love the combo of them with curry and the apples add layer of flavor and crunch. =)

  3. Quinoa reminds me of couscous but is healthier! =) You can also blend quinoa with brown rice or something else if you're not used to it yet.
